Oven-roasted seasoned potato wedges
You will need:
4 medium potatoes
For the seasoning:
4 tbsp olive oil
3 fat garlic cloves
1/4 tsp pink rock salt, crushed
1/3 tsp ground sweet paprika
1/4 tsp freshly ground black pepper
1/2 tsp ground cumin
pinch of chili flakes
a good pinch of ground turmeric
1 tsp dried rosemary
For the topping:
3 tbsp chopped fresh parsley leaves
3 tbsp finely grated Parmesan cheese
1. Scrub the potatoes, leave the skin on, then cut into wedges.
2. Wash the potatoes in cold water and let it soak for 15 mins, then drain and dry with a kitchen towel. Put potato wedges into a large mixing bowl.
3. Mix the spices & rosemary, add to the potato wedges, mix well.
4. Add minced garlic and olive oil. Mix thoroughly.
5. Line a baking tray with baking paper. Arrange the potatoes in a single layer, and bake in a preheated oven at 200 C for about 25 to 30 mins, until golden brown.
6. Put roasted potato back into the mixing bowl and add parsley and Parmesan. Toss the bowl so the wedges get seasoned evenly. Serve hot. Enjoy!
