Easy snack - toasted seeds
I cook something from butternut squash once or twice a week, usually soup or curry. The hard skin is inedible but the plumb seeds make quite a good snack when toasted.
You will need:
seeds of a butternut squash
1. Scrape out the seeds and put them in a bowl.
2. Wash with cold water, several time, until all the seeds are clean from the squash fiber.
3. Drain. Pat the bottom of the strainer dry. Arrange seed in a single layer on a folded paper towel. Dry for a few hours or overnight.
4. Heat a thick bottomed pan on medium heat (dry, no oil). Add dry seeds and toast until seeds get a nice golden colour. Let them cool, then share and enjoy!
