Berry porridge (GF, DF, SF, V+)

Creamy coconut-banana porridge with berries

Berries love porridge. Or is it the other way? Porridge loves berries? I am not quite sure but I am absolutely, deeply, madly in love with porridge and berries. They make a fabulous combo. When the creaminess of the oats and the freshness of the fruits explode in my mouth I feel like getting up in the morning was well worth it.

You will need (feeds 2 people):
75 g gluten-free porridge oats
3 cups of filtered water
1 heaped tbsp creamed coconut
1 ripe banana

To serve: blueberries, raspberries, desiccated coconut and hulled hemp seeds;

1. Bring the oats and water to boil. Add the creamed coconut, reduce to simmer and cook for 8 to 10 mins.
2. Take the porridge off the heat, add sliced bananas, gently fold in, cover with a lid and let it stand for 4 to 5 mins.
3. Wash the berries, drain well.
4. Serve porridge into bowl(s), scatter over the berries, sprinkle with desiccated coconut and hulled hemp seeds. Enjoy!
