Lamb shank broth (GAPS)

Slow cooked clear broth made of lamb shanks

I have a new best friend in the kitchen, a slow cooker. This friend takes care of the dinner. We have a quick briefing right after breakfast, and I can go about my business all day, and the dinner is ready at 6 pm. Isn't it great?

You will need:
two lamb shanks
6 young carrots (bunched)
1 celery stick
1 leek
1 small onion
2 garlic cloves
1 bay leaf
3 whole black peppercorns
pinch ground turmeric
1/3 tsp whole caraway seeds
1 cm fresh ginger

1. Clean the lamb, clean the veg, and put all ingredients in a slow cooker, fill the pot up with filtered water, and gently cook for at least 8 hours.
2. Discard the bay leaf, onion, garlic, ginger, celery and leek. Serve the rest of the soup hot. Sprinkle with parsley leaves. Enjoy!
