Simple sides: Pan fried courgettes (AIP)

Courgette is a neutral veg that goes well with just everything

You will need (serves 2):
8 young courgettes (small, thin ones are the best)
around 35-40 g raw pork fat
a wee pinch of fine Himalayan rock salt (optional)

1. Rinse the courgettes, cut off the ends. Cut them in half, lengthwise, then slice.
2. Thinly slice the raw pork fat.
3. In a wide pan on medium heat start to render the pork fat. When most of the fat is rendered add the courgettes slices. Toss with two wooden spatulas to cover with the fat. Increase the heat to medium-high, tossing now and then, fry until at least half of them are lightly browned. Season with salt (if using).
4. Serve with your choice of protein. I have served this tasty side dish with steamed mackerel fillet and avocado. Drizzle with olive oil, if you like. Enjoy!
