Three nut energy bites

Raw, vegan, gluten-free, full of nut goodness energy bites

Quick and easy sweet bites, made with simple, honest ingredients. These yummy bites made with three kind of nuts, have no added sugar, sweetened with dates only, and complemented with cinnamon. If you need a quick energy boost, have them ready in your fridge.

You will need (makes 18 balls):
1/2 cup cashew nuts
1/2 cup pecan nuts
2 tbsp almond butter
1 cup pitted, roughly chopped dried dates
a wee pinch of salt (optional)
a generous pinch of ground cinnamon
1 heaped tbsp chia seeds

1/4 cup ground almonds, for rolling

1. Put the cashews and pecans into a blender and chop briefly, nuts should be coarse-crumb.
2. Add the almond butter and the roughly chopped dates, and blend the mixture together till you get a paste-like consistency with small nut pieces here and there.
My date was too dry, so I added 2 tbsp of water to achieve the right texture. Nest time I should soak such dry dates.
3. Scoop the mixture into a bowl, season with salt (if using) and cinnamon, add the chia seeds and give it a good swirl.
4. Put the bowl into the refrigerator for 10 to 15 mins to cool down a bit.
5. Between your palms shape little balls from the dough (if you can resist not to eat as it is) and roll them in ground almond to coat. Enjoy!

Allergy: nut. No gluten. No egg. No sugar.
