Fill your plate with colours for breakfast
The traditional seven colors of the rainbow are: red, orange, yellow, green, blue, indigo, and violet.
You will need:
sweet pointy red pepper (for red)
carrot (for orange)
an egg per person (for yellow)
leek (for green)
red onion (for blue, indigo and violet)
a pinch of salt and freshly ground black pepper
1. Slice the red pepper, julienne (or grate) the peeled carrot, slice the well washed leek, and chop the red onion.
2. Lightly beat the egg with a fork.
3. Heat the pan to medium, brush with olive oil, pour in the egg and sprinkle generously with the veg. After a minute or two turn to cook the other side too.
4. Turn onto a plate, cut into four parts, season with salt and pepper (for adults). Enjoy!
Allergy: egg. No gluten. No dairy. No sugar.
Tips: Use tomato for red, sweet corn for yellow, spinach, parsley, broccoli, celery, okra, green pepper, courgette, or watercress for green, aubergine for blue/purple. For GAPS: yellow pepper for yellow, and kale instead of okra.
