Papaya and banana porridge with coconut

Dairy-free porridge with papaya and banana chunks

You will need:
porridge oats (about 4 heaped tbsp)
1 ripe papaya
1 ripe banana
2 tbsp creamed coconut
1 tbsp desiccated coconut

1 tbsp desiccated coconut, to serve

1. Put the porridge oat in a pan, cover with water (about an inch over the oats) and bring to boil.
2. When boiling add creamed coconut and desiccated coconut, mix well.
3. Reduce the heat to minimum, and gently bubble for 8-10 mins.

4. Cut the papaya in half, scoop out the seeds and with a melon baller carve out the flesh.
5. Add the papaya and banana chunks to the oat. Cover with a lid and let it stand for 5 mins. To serve desiccated coconut. Enjoy!
