Orange and poppy toddler oaty

Soft oaty bars with orange and poppy seeds

You will need (for a 20 x 20 cm baking tray):
3 good sized carrots
3 big enough juicy apples
2 tbsp coconut oil, melted
1 juicy orange
a pinch of ground cinnamon
2 scant cups porridge oats

desiccated coconut, about 4 heaped tbsp

1. Peel the carrots and the apples. Squeeze out the orange (take out the seeds but do not filter out the bits).
2. In a big bowl grate the carrots and the apples. Add the fresh orange juice with bits. Mix in the oat, oil and cinnamon, and add the poppy seeds. Mix well and let it rest for 15 to 20 mins.

3. Preheat the oven to 190 °C. Line a 20 cm square baking tin with baking paper.
4. Scoop the mixture into the baking tin and squash down. Sprinkle with desiccated coconut. Bake for 25-30 mins.
5. Remove from the oven, leave to cool for about 5 minutes, then take the oaty out, put on a chopping board, peel off the baking paper and let it cool completely, then cut into rectangles or squares. Enjoy!

Allergy: gluten. No sugar. No eggs.

Tips: Use gluten-free oats to make this treat free of gluten.
