Smoked salmon with avocado and red onions on focaccia bread
You will need:
smoked salmon (organic, Inverawe)
plain focaccia bread (see focaccia recipe)
avocado
red onion
freshly ground black pepper and lemon (optional)
To assemble:
Allow the freshly baked focaccia to cool down completely, then cut into squares. Place sliced avocado on top. Lay a thin layer of smoked salmon over the avocado. Stick a red onion slice piece under the fish. Sprinkle with freshly ground black pepper and a squeeze of lemon just before you bite into. Enjoy!
Tips: Impressive as a appetizer, cool party food, and great for breakfast too. Easy to assemble. Bread can be made in advance and kept fresh in whole till needed.
Allergy: gluten, yeast, fish. Dairy-free. Egg-free.
