Fruity porridge for a hearty morning start
Apple and banana are the classic porridge fruits (see Autumn porridge) but papaya with it's colour and silky taste gives a nice twist to the whole porridge. When I want to go fancy I lighten the mood of my porridge with a sweet, ripe, juicy papaya, the perfect deluxe-porridge ingredient. With papaya the end product is more watery so if you prefer a thicker porridge, reduce the water.
I like mine almost soupy.
You will need:
porridge oats (about 4 to 5 tbsp)
a juicy apple
a ripe banana (with brown spots)
a ripe papaya
1 tbsp creamed coconut
1 tbsp chia seeds
1 tbsp poppy seeds
1. Put the porridge oat in a pan, cover with water (about an inch over the oats) and bring to boil.
2. When it's boiling add creamed coconut, chia seeds, poppy seeds and reduce the heat to minimum to just gently bubble.
3. Peel the apple and cut off chunks till you reach the core, and add the apple chunks to the porridge. Gently cook for about 5 mins.
4. When you have reached the desired consistency, remove from heat and add the banana slices and the papaya bits (carve the flesh out with a melon ball carver after you discard the seeds). Cover and let it stand for 5 mins. Serve hot. Enjoy!
Tips: Go gluten-free by using gluten-free porridge oats.
