Fish for breakfast (GAPS)

What, no eggs?

For a few weeks I am coming off eggs. I have decided to give them a break. Since doing the GAPS breakfasts were all about eggs. For the next few weeks I am going to have egg-free breakfasts. What to eat for breakfast if not eggs while on GAPS? Simple, eat fish! Quick and easy breakfast option. Unless you are content with more red meat or chicken on your breakfast plate. There is no way I am going to stuff more meat into my mouth.

You will need (per person):
1 mackerel fillet
1 courgette
1 carrot
1/2 of a small broccoli
a generous heap of raw sauerkraut
1 tbsp coconut oil

1 tbsp ghee and
1 spring onion, to serve

1. Place the mackerel fillet in a pan. Add a good splash of filtered water. Cover with a lid. Bring to boil, then reduce the heat to minimum and cook/steam your fish for 7 to 8 mins.
2. Break up the broccoli into small florets and steam for 6 to 8 mins.
3. In a wide pan melt the coconut oil, add the carrot shavings. Cover with a lid and steam for 3 to 4 mins, then add the courgette shavings too and steam for further 2 to 3 mins.
4. To serve: Transfer the fish onto a plate, garnish with the veg. Add a dollop of ghee to the hot veg and sprinkle the fish with the chopped spring onion. Enjoy!
