Creamy carrot soup in meat broth base
A great INTRO STAGE 1 soup, rich in flavours and colour, easy on your digestive system, and super quick to make.
If you are on the GAPS diet then there is bone or meat stock on hand either in the fridge or just been cooked. This recipe is based on meat broth, the essential healing tool while following the GAPS diet.
You will need (feeds two):
3 young carrots
1 wet garlic clove
3 cups of bone broth / home-made stock (chicken, beef or lamb)
2 pieces of boiled meat (stock meat)
2 tbsp sauerkraut juice
1. Peel and thinly slice the carrots. Put sliced carrot in a pan. Add filtered water just to cover. Bring to boil, reduce to simmer and gently cook for 15 to 20 mins, until very soft.
2. Add 1 cup of meat stock (I prefer chicken with this one), add the sliced garlic, then blend with a hand blender until creamy.
3. Add the second cup of stock and the meat pieces (the meat you have made the stock with). Bring to boil again. Gently cook for a minute or two. Let it rest for a few minutes to cool down a bit.
4. Serve the creamed carrot soup with a piece of meat, and add 1 tbsp sauerkraut juice into each cup. Enjoy!
