No-meat dried mushroom and sauerkraut soup with lentil and pearl barley
For New Year's Eve I prepared the vegan version of the mushroom and sauerkraut soup which I made for Christmas. I substituted the meat with Le Puy green lentils. The preparation and ingredients are the same as earlier, with the exception that lentils go were the pork sausages went the first time.
