Make you own real vanilla sugar

I never liked the commercial vanilla flavouring. It has a terrible aftertaste. It is too strong. For me it just trying so hard to be vanilla. Over the years I learned a thing or two about vanilla. The so called 'natural vanilla flavouring' has nothing to do with the natural vanilla, it has no plant origin. Actually, thanks to beavers for the natural bits in it. All hail Castoreum. No thanks. I stick to the vanilla vanilla. Bye beavers.

You will need:
175 g fair trade organic unrefined raw cane sugar
1 organic vanilla pod


1. Cut the vanilla pod in half lengthwise. Scrape out the seeds. Cut the halved pods in 3 or 4 pieces.
2. In a mixing bowl mix the vanilla seeds with the raw cane sugar. Combine well.
3. Put the sugar in a clip-top storage jar. Press the pod pieces into the sugar.
4. Close the lid and put the jar away, in the back of your cupboard maybe, and leave it there undisturbed for 2 or 3 weeks.

After the short resting time the flavour of the vanilla infuses the sugar and it is ready to use. Next time you need a tsp of vanilla sugar you will have your very own beaverless vegan vanilla sugar.
