Roasted sweet potato, cauliflower (AIP)

Colourful, oven-roasted side dish

You will need (serves 2 to 4):
2 medium sweet potatoes
1 medium-small cauliflower
3 medium red onions
2 generous tbsp coconut oil
1/2 tsp dried thyme
1/2 tsp dried oregano

1. Rinse the cauliflower and cut into small florets (save the stalk for a veg stock), peel and dice the sweet potatoes, peel and cut the red onions into wedges. Put the prepared veg into a roasting dish.
2. Melt the coconut oil. Pour over the veg and mix with your hands to combine the veg with the oil.
3. Season with the herbs and put the dish into a preheated oven and roast on 175 C for about 45 mins.
4. Serve hot with roasted meat of your choice. Enjoy!
