Avocado mousse (GF, V+)

Silky-creamy deliciousness

Fresh colour, light and airy texture, no added sugar, no gluten, raw, vegan, and only two ingredients.

You will need:
1 large ripe banana (with tiny brown spots)
1 medium sized ripe avocado

1. Peel both fruit and put them in a tall container, a jug for example.
2. Insert the hand blender and blend for a minute or two in high speed until creamy and the tiny air bubbles are incorporated.

In the past I was mashing avocado and banana together with a fork. Sometimes it stayed lumpy with bits here and there, but blending it with a high speed blender really brings out the colour of the avocado and the incorporated air bubbles make it silky smooth and irresistible.
