Fresh colour, light and airy texture, no added sugar, no gluten, raw, vegan, and only two ingredients.
You will need:
1 large ripe banana (with tiny brown spots)
1 medium sized ripe avocado
1. Peel both fruit and put them in a tall container, a jug for example.
2. Insert the hand blender and blend for a minute or two in high speed until creamy and the tiny air bubbles are incorporated.
In the past I was mashing avocado and banana together with a fork. Sometimes it stayed lumpy with bits here and there, but blending it with a high speed blender really brings out the colour of the avocado and the incorporated air bubbles make it silky smooth and irresistible.
It is delicious straight from the container but if you can stop yourself eating it all then serve over crêpes. For gluten- and dairy-free crêpe recipe click on the link.
