Simply can't get enough of salads with green sauce!
Here is another beautiful green salad with spring-love and pure veg, just gorgeous! No wonder I can't get enough.
You will need (serves 2):
4 young courgettes
2 broccoli stems
1 carrot
1 celery stick
handful of young spinach leaves
handful of watercress
1/2 young romaine lettuce
handful of radishes, around 5 to 7
1/3 cut chopped onion greens
radish sprouts
1 tbsp olive oil + extra for drizzling
green sauce, to serve
1. Prepare your veg:
Spiralize the courgettes and slice up the endings left in the spiralizer.
Peel and slice the broccoli stems (there was steamed broccoli florets for breakfast and these were the leftover stems).
Peel and grate the carrot.
Thinly slice the celery.
Rinse and drain the spinach and watercress.
Finely chop the lettuce.
Thinly slice the radishes.
Finely chop the onion greens.
Rinse and drain the radish sprouts.
2. In a large pan add the olive oil and the spiralized courgettes and on medium-low heat heat gently for 4 to 5 mins. Add the courgette and broccoli stem slices, then the grated carrot, thinly sliced celery and chopped onion greens. Toss them to combine.
3. Toss in the chopped lettuce and the spinach and watercress leaves, and finally the radish sprouts. Gently toss them together.
4. Drizzle with olive oil. Ready to serve. Enjoy!
5. Serve with green sauce. This time I have used Luigi's green sauce (once I have the permission I will disclose the ingredients). Till then try this one: Peppery green sauce.
