Simple, two-ingredient pure delight from the oven
There is fog in the mornings, surely a sign for the weather is getting grimmer. What better excuse to switch on the oven daily! Bake these delightful squashes, put your feet up and spoon the flesh out while still hot, and watch the fog to dissolve.
You will need (serves 2 to 4):
1 green kabacha squash and 1 harlequin squash
4 tbsp ghee
1. Wash the squashes. Cut them in half. Spoon out the seeds.
2. Spread some ghee on the inside of each.
3. Arrange the squash halves cut side down on a baking tray and put the tray in a preheated oven and bake-roast at 180 C for 30 to 35 mins.
4. Turn the squashed up and drop 1 tbsp ghee into each green kabacha and 1/2 tbsp into each harlequin squash. Grab one (or two) and enjoy!
Tip: You can make it VEGAN by using coconut oil instead of ghee but the taste just won't be the same, sorry.
