Fried eggs with mini patties (GAPS)

Meat, eggs and veg breakfast

You will need (per person):
2 eggs
4 mini patties (like this one)
2 or 3 young carrots
onion greens
1 tsp fresh thyme leaves
2 tbsp ghee

1. For the mini patties please see preparation and full ingredients here. Use less meat or refrigerate either the meat mixture or the fried patties for dinner or next day or freeze them for up to 2 weeks. Measure out just a scant tbsp meat for a mini patty.
2. Peel and slice the carrots, then steam for about 10 to 12 mins.
3. Melt 1 tbsp ghee, crack the eggs and fry until egg whites are set.
4. Serve hot with onion greens and fresh thyme leaves. Enjoy!
