Pork crackling (AIP)

Crunchy and crispy

The snack - thinly sliced, oven roasted fatty pork skin. 100% pork, nothing else! No nasties. No table salt. Delicious and crackly. Cheap and cheerful as a former colleague would say. It is so easy to make your own. This way you will know exactly what's in your snack.

You will only need:
a piece of fatty pork skin, about 500 g

1.With a knife scrape both sided (skin and fat) clean of any bits and pieces.
2. Using a very sharp knife cut the pork skin into thin slices, about 3 to 4 mm thick.
3. Arrange the thin strips in a snigle layer on a baking tray or two if you need (I have used pyrex, no need for a baking paper here) and place the tray in a preheated oven and roast at 190 C for about 25 to 30 mins until golden a crispy.
4. Transfer the cracklings onto a plate, let them cool down slightly then share and enjoy!
