End-of-season strawberries blended into a rich smoothie
You will need (serves 2):
1 large ripe banana (no green ends, yellow skin with brown spots)
200 g fresh strawberries
2 or 3 fresh coconut fingers
1 medjool date, optional
juice of a 1/2 lime
200 ml still mineral water or coconut water
1. Peel the banana and cut into chunks. Rinse the strawberries and cut off the greens, roughly chop the fresh coconut, pit the date (if using), juice the lime.
2. Put all the prepared ingredients into the blender and pulse for a few seconds then blend for 15 to 20 seconds.
3. Pour into glasses, serve, share and enjoy!
