Easy, creamy and delicious
You will need (serves 4):
4 medium sweet potatoes
45 g finely sliced raw pork fat or 2 generous tbsp lard
3 medium onions, thinly sliced
fresh thyme leaves
1. Rinse the sweet potatoes, with the skin on steam them until the fork goes through easily.
2. While the potatoes are steaming render the pork fat or melt the lard and add the thinly sliced onions. Cook on low heat, stirring occasionally, until lightly browned.
3. Peel the potatoes, mash them with a fork, stir in the prepared onions and the fresh thyme leaves. Serve with grilled or roasted meat of your choice. Enjoy!
