Warm greens with garlic
This lovely aromatic side dish will brighten up any fish or meat. I especially love the texture!
You will need:
4 cups chopped curly kale (green kale)
4 cups chopped cavolo nero (black kale)
2 tbsp coconut oil
2 cloves of garlic
2 tbsp olive oil
a good pinch of Himalayan rock salt
1. Rinse the kales, pull the leaves off the stem, then chop.
2. In a wide pan melt the coconut oil, add the thinly sliced garlic. Gently fry for a minute or two until aromas have released.
3. Add the chopped kale. Cover with a lid and gently cook, steam on low heat for about 8 to 10 mins.
4. Season with salt, drizzle with olive oil and serve while it is still warm. Enjoy!
