Warm greens with garlic
This lovely aromatic side dish will brighten up any fish or meat. I especially love the texture!
You will need:
curly kale (green kale), 4 cups chopped
cavolo nero (black kale), 4 cups chopped
2 tbsp coconut oil
2 cloves of garlic
2 tbsp olive oil
a good pinch of Himalayan rock salt
1. Rinse the kale leaves, pull the leaves off the stem, then chop.
2. In a wide pan melt the coconut oil, add the thinly sliced garlic. Gently fry for a minute or two, until aromas have released.
3. Add the chopped kale and a good splash of filtered water. Cover with a lid and gently cook, steam on low heat for about 8 to 10 mins. or less if you have chopped the kale finely.
4. Season with salt, drizzle with olive oil and serve while it is still warm. Enjoy!
