Thick, creamy green smoothie with coconut yoghurt
You will need (serves 2 to 3):
a good handful of young spinach leaves
1 ripe avocado, medium size
1 ripe banana, medium size
1 juicy apple, medium size
3 heaped tbsp coconut yoghurt*
1 cm fresh ginger
some coconut water**
1. Rinse the spinach leaves and drain. Cut the avocado in half, discard the seed and peel off the skin. Peel the banana. Peel the apple, then quarter and discard the core and seeds. Thinly slice the ginger.
2. Put the prepared ingredients into a blender, add a good splash of raw coconut water then blend into a smooth drink. Enjoy!
