Another fish start of the day
Pink, green and orange: poached wild salmon, onion cavolo nero and kabocha squash puree.
I had few leftover roasted kabocha squash wedges from last night's dinner. I have reheated them in the oven, then peeled and mashed the flesh with 1 tbsp ghee.
For the black kale, I have melted 1 tbsp ghee, added 1 thinly sliced onion and 2 or 3 cups of chopped cavolo nero and just steamed on low heat covered with a lid.
Finally, I have poached the salmon fillet in a pan filled with 1/2 cup of water. Enjoy!
