Leek and cheddar penne

Penne pasta with flavorful leek and smooth cheddar

You will need:
penne rigate
2 young leeks
1 tbsp butter
1/2 cup finely grated cheddar cheese
freshly ground black pepper

1. Cook the paste in plenty of water, with a pinch of salt.
2. While the pasta is cooking, melt the butter, add the sliced leek, and soften (do not allow to brown), just gently, to preserve the vivid green colour.
3. Drain the pasta, add the buttery leek, mix.
4. Add the finely grated cheddar too, gently fold in, and serve. Sprinkle with a bit of cheddar and black pepper. Enjoy and Happy St. David's Day!
